This dashi is homemade broth. When the dashi broth comes to a boil, please reduce the heat slightly.
First, place a handful of cabbage in the pot. Then shabu-shabu the meat.
The meat is imagined to be eaten with cabbage after it changes color.
Next to the cabbage is Okinawan kurumafu. Place it in the pot and let it soften before serving.
Shabu-shabu (shabu-shabu) the mozuku for about 10 seconds before serving.
This dashi is seasoned and should be served as is first.
